1 can chickpeas drained and rinsed
2 large eggs
1/4 tea spoon salt
small bunch of corriander
grated zest of small lemon
1/2 onion chopped
125g cooked broccoli chopped
1/2 cup toasted bread crumbs (whole-grain)
1) Combine chickpeas, eggs and salt in food processor and pure until required consistency.
2) Tip into a bowl and mix in all other ingredients, and let sit for a couple of minutes so the crumbs can absorb some of the moisture.
3) You can add more bread crumbs a bit at a time to firm up the dough if need be. Form into patties and fry in a little oil for 7 to 10 minutes, until the bottoms begin to brown. Enjoy.
